- the glycemic index is a measure of the properties of food and how much effect the food has on blood sugar levels. most gluten free foods, which are substitutes for gluten rich food, like wheat, usually show up in food as refined refined carbohydrates, and as such both gluten free and gluten rich foods have a relatively high glycemic index. rice has a GI of 72 and wheat has a GI of 73 (essentially the same) If you are concerned about the glycemic index of the foods you eat, stay away from both gluten free and gluten rich foods. an apple has a GI of 40 which is also gluten free and is not used as a substitute for wheat, so it is not usually called a gluten free food. to answer your guestion directly: gluten free foods do increase your blood sugar levels.
