  1. A difficult answer. But a reliable guide is the carbohydrates. no processed cheese, due to fat has a high gi. especiallty trans fat so gio for low fat cheese takes a while to get used to , I know. also use whole grain cereal bread
  2. A lot of people don't know this, but a serving size for a piece of cake or a brownie, for a diabetic is a 2 inch square. So don't over do it on the sweets.
  3. Hi. Sadly, I don't think you can average the GI for the foods you eat. One high GI item is going to rapidly boost your blood sugar no matter what, since there are not negative GI food items. We all would like to find loopholes. I assure you, after 45 years of experience, that any loophole you find will soon tighten into a noose around your health. Get yourself on track first, then you can figure out if and when you can "stretch" the rules. If you absolutely must have a brownie, (and who doesn't need chocolate?!) then work with your medical team to figure out how to work it into your daily food intake without messing with your health. When I was 13, my doctor figured out how to let me have a serving of potato chips at lunch every day.
  4. You point out something that many people don't realize about the glycemic index. It only takes into account the affect of that particular food with no regard to how it may react with other foods. having said this, I would not recommend the brownie and string cheese and would recommend something much healthier like trail mix, nuts, fruits or vegetables.
  5. It's not really a loophole. The protein and fat in the cheese will slow down the absorption of the sugar and other carbohydrates in the brownie *a little bit*. If you're diabetic, you might notice that your blood sugar doesn't go up as quickly or as high because of the cheese, but the effect of the cheese would be more pronounced in something without that much sugar, like a little rice or a small serving of potatoes - carbs that are high glycemic, but slower to metabolize. I don't know how much significant impact would occur from a little cheese.
