Why the supposed difference in glycemic index/loads for oatmeal?

I keep reading that the glycemic index for instant oatmeal is greater than regular old-fashioned oats. Why is this? Isn't instant oatmeal mostly pre-cooked, and then dried out? Also, what is the glycemic load for instant vs. old-fashioned?

There is twice the soluble fiber in steel cut oatmeal or rolled oatmeal as there is in instant oatmeal This has a big impact on the glycemic index since the glycemic index basically is an indicator of two things. How much sugar and how easily the sugar is given up. The fiber does not change the sugar amount but it significantly impacts how easily the sugars are released.
