What type of meat should I eat on a low Glycemic Index plan?

  2. Anything you want except meat dishes prepared with flour or breading.
  3. Lean meats such as fish, chicken, and beef. Go for the leanest cuts. Lean meats can be purchased at your store, such as rozen white meat chicken, tuna in a can, frozen shrimp, etc. As for preparation, never fry the meat. Baking is better, but grilling is best. Not only is it the least fattening way to cook meat (the oils drip out) it has a delicious smoky flavor! When you fire up the grill, cook a lot of meat on it so you can have quick left overs for the rest of the week.
  4. Avoid organ meats, they rate higher on the Gi and carb score. Some seafoods too for example whole oysters. Also avoid most deli meats. Many are made using huge amounts of filler and many are cured using sugar. Things like the fake crab and lobster are HUGE in fillers so avoid them like the plague! All real, fresh meat is great on a low GI/low carb plan.
  5. Meats and fats are not carbohydrates and do not readily turn into sugars. You can eat any meat you want. You can prepare it in any way you want except En Croute! (in crust) I wouldn't be too concerned about breaded meats unless they are heavily breaded. This will account for less than 2 grams of carb. Maybe you should go read David Mendosa's website for more info on glycemic loads on low carb foods.
