How is insulin and glycemic index related?

For a bio project, preferably in plain english.. THANKS :)

  1. glycemic index measures the response of glucose to foods we eat....a high gi food (ie pasta or candy) would elicit a strong response of plasma glucose. by contrast, a high fiber food, is low gi, meaning that there's a smaller response to glucose in the blood. the more glucose you have in the plasma, the more insulin is needed to store the food in fat cells or to be used as energy. the important thing that insulin does is clear the plasma sugar--so you don't have hyperglycemia or high blood sugar. so if there is a high gi food, then more insulin is needed to put it away in the body, as compared to a low gi food.
