how high glycemic index (GI) food induces diabetes & low GI food prevents diabetes?
recent studies shows that eating two much high GI food can induce diabetes and a diabetes can be controled by consuming low GI food.i want to know the details physiological mechanism of these fact.how does high GI food induces diabetes and low GI controls?

- A high GI food is one that drastically raises blood sugar after eating it. The pancreas has beta cells that produce insulin that tell the fat cells to take up sugar from the blood and store it. If the blood sugar is always high, insulin is always being produced. So, two things seem to go wrong. 1) the pancreas burns out, and it can no longer produce enough insulin. 2) the cells stop responding to insulin..and stop taking up sugar. Either way, it is a positive feedback loop when diabetes kicks in... meaning that diabetes only makes things worse and harder to reverse. So, a simple theory, would be to "self regulate" your blood sugar by preventing sugar spikes by only eating low GI foods. This is used in hopes to save the pancreas from burning out. Another theory is that diabetes is caused by having to many fat cells around the abdominal area specifically. The fat cells release a unique hormone... that I am not familiar enough with off the top of my head to explain right now... but the short story is that it is also important to have a good muscle to fat ratio. As we age, we generally become less active... so we loose muscle mass and gain fat...a bad combination. Therefore, if preventing diabetes is a goal... then weight and muscle mass control, along with a low GI diet is advised.
